Life is changing…

Baby Chicken Noodle Soupwpid-IMG_20140220_145725.jpg

2 small cans chicken broth (I used College Inn Fat Free Low Sodium)
1 chicken breast cut into small pieces, raw
1 cup chopped carrots
1/2 cup chopped celery
1 1/2 cups noodles (dry)
1 tbsp parsley
Water as needed
*approximate measurements, just throw in stuff as you see fit, you can’t really screw this up

Put everything into the pot. Add water until the pot is nearly full (not so much it will boil over though). Bring to a boil. Cover with lid, reduce heat, and let simmer for awhile until noodles and carrots are tender.

Spoon out the amount you want to give baby and puree until smooth. I served with some rice cereal mixed in to thicken it up.

Once baby’s portion is removed, add yummy seasonings like onion or celery salt, pepper, etc. I also added a bouillon cube and let it simmer uncovered to cook down and give it more flavor.
