Life is changing…

The super easy version!

1 steamer
1 chicken breast, chopped into very small cubes
1-2 broccoli heads
1 boil-in-a-bag brown rice (or equivalent of 2 cups of cooked rice)

Make sure the chicken is cut very small so that it cooks thoroughly. Place in the steamer and allow it it to steam for 5 minutes, stirring it occasionally to ensure all the pieces get a chance to cook on all sides. Check that it looks at least mostly done, then add broccoli, cut into smallish chunks. At the same time lift up the steamer basket and add your boil-in-a-bag rice to the water below. Allow to steam and boil for 10-12 minutes.

Remove the chicken and broccoli to a big bowl (it makes a lot), add the rice, and reserve the water from steamer base for pureeing (that way any nutrients that cooked out into the water can be added back). Mix it all up so that all three ingredients are distributed pretty evenly, then puree in manageable batches, adding water from the steamer pot as needed for consistency.

This batch filled 5 4oz and 5 2oz containers for me. I thought for sure I was going to run out of containers before it was all stored.
